Jacqui Kelly’s Rice Krispie Treat Recipe

This recipe and method is for one portion of RKT, as used in Jacqui’s Rainbow Dragon in our February issue.

As many of you might know, rice krispie treats (more commomly referred to as RKT) are an essential edible material for most cake decorators. When a cake structure needs a lighter and more malable element than cake, rice krispie treats are perfect for their lightness, cheapness, and easiness to model. They also make delicious snacks just by themselves! This recipe and method is for one portion of RKT, as used in Jacqui’s Rainbow Dragon in our February 2018 issue.

You will need:

Ingredients:

  • 200g Rice cereal
  • 150g marshmallows (any size)
  • 2 tablespoons of golden syrup

Gently melt the marshmallows in the microwave (use a large bowl as they triple in size), add the golden syrup to the warm marshmallows then mix in the cereal with a greased spoon to stop it getting super sticky.

Immediately mould your RKT into desired shape whilst still warm, or press into a greased rectangular pan if making as individual snacks.
