- 15cm (6in) round cake
- 700g (1lb 6oz) sugarpaste
- 4 x 20g (¾oz) coloured sugarpaste for the terrazzo pieces

Crumb-coat the cake with buttercream, then pop it in the fridge for 45 minutes. You can visit Blue Door Bakery on YouTube for guidance. Take the coloured pieces of sugarpaste and roll each of them out to 1-2mm thin. Using a pizza cutter, cut out random shapes and lay them in between two food bags to keep them soft. Lightly dust a clean work surface with cornflour, then spread out the terrazzo pieces in a random pattern. You can also add a few sprinkle strands into this too for added texture, if you wish. Take your cake out of the fridge and lightly spray it with water. Roll out the plain sugarpaste, ready to cover the cake. When it's approximately 5mm (¼in) thick, pick it up and flip it over, then place it on top of your terrazzo pieces. Continue to roll out just a couple more times. Next, place this on top of your cake, making sure the terrazzo design is on top. Cover the cake, using your hands to gently smooth down the fondant. If any pieces fall out you can add these back in later. Smooth with a cake smoother, then cut off any excess around the base. Add any sugarpaste shapes or sprinkles which may have fallen out, then smooth the cake with a smoother again, to finish. Place the finished cake on a cake stand, then attach a ribbon, if you wish.
