Gold Glitter Cake

You will need

For the cake

  • 13cm (5in) and 18cm (7in) sponges

To decorate

  • sugarpaste
  • Sugarflair pink food gel colouring
  • CMC or tylose powder
  • CK sugar crystals in gold and opal
  • CK gold glitter squares
  • Rainbow Dust edible gold sequins
  • piping gel
  • edible glue

Equipment

  • 25cm (10in) cake drum
  • rolling pin
  • rose cutter
  • ball tool
  • sponge mat
  • large deep tray
  • dowels
  • gold ribbon
  • cake topper of your choice (optional)

Instructions

Colour sufficient sugarpaste to cover the bottom tier a pale pink colour. Cover the bottom tier with the pink sugarpaste, then cover the top tier with white sugarpaste.

Add CMC to the remaining pink sugarpaste, then roll out thinly and cut out rose petal shapes.

Soften the edges of the petal by rolling a ball tool around the edges on a sponge mat. Set aside for 5 minutes to firm up slightly.

Cover the bottom tier with the sugarpaste rose petals using edible glue to secure to the cake. Set to one side to dry.

Mix the opal and gold sugar crystals with glitter squares and edible sequins, then tip them into a deep tray.

Cover the top tier with piping gel, then very carefully roll the cake in the glitter mixture until the whole cake is covered. Set aside to dry.

Dowel and stack the cake, adding a gold ribbon to the base of the top tier to give a neat finish.

Add your chosen topper to the top of cake and enjoy the celebrations!
