You will need
For the cakes (makes 12)
- 12 lemon cupcakes, following your favourite recipe
- Lemon buttercream (see recipe, step 9)
- Renshaw Extra Ready-to-Roll Icing
- Rainbow Dust Cake Craft Pens
When you are ready to create your cupcake toppers, begin by using the finer end of the Rainbow Dust Cake Craft Pen in black to lightly sketch out the outline of your design.
Beginning with the lightest colour first, colour in all of the main details with the thicker end of the Rainbow Dust Cake Craft Pens – in this case, the yellow lemons.
Shade in the details, such as the heart eyes, laughing tears and so on, using the photo as a guide or creating your own design.
Finally, use the thicker end of the Rainbow Dust Cake Craft Pen in black to go over the outline of your design, before adding the final details including some patches of dots for the lemon texture.
Bake up a batch of lemon cupcakes, following your favourite recipe (or visit blog.mrbakerscakes.co.uk to follow Rob’s) and allow to cool completely.
Make up a batch of lemon buttercream, using 150g (51/2oz) slighty salted butter, 300g (101/2oz) icing sugar and the juice of a small lemon, then pipe a thin layer of buttercream over each of your cupcakes.
