Caramelised ginger grapefruits with pecan granola

Listen, it’s time. It’s time that we revolutionised breakfast, one caramelised ginger grapefruit at a time. Your mornings deserve better!

For a light but super tasty start to your day, these Caramelised ginger grapefruits with pecan granola from Flahavan’s Irish Porridge Oats are a winner every time. But the best bit? They won’t see you slaving away in the kitchen for hours. They’re quick, healthy and delicious!

Caramelised ginger grapefruits

Caramelised ginger grapefruits with Flahavan's pecan granola

Servings 4 people

Ingredients

  • 100 g Flahavan's Organic Jumbo Oats
  • 40 g pecans roughly chopped
  • 2 tbsp ginger preserve mixed with a splash of water
  • 2 grapefruits
  • 2 tsp ground ginger
  • 4 tsp honey
  • 400 g Greek yoghurt to serve

Instructions

  1. Preheat the oven to 200°C/Gas Mark 6. 

  2. Mix together the Flahavan’s Organic Jumbo Oats and pecans, then add in the ginger preserve ensuring that the oats and pecans are evenly coated. 

  3. Tip the mixture onto a lined baking tray and bake in the oven for 15-20 minutes (or until golden brown). Once baked, remove from the oven and leave to cool. 

  4. Meanwhile, cut each grapefruit in half. Then, using a sharp, serrated knife cut the grapefruit flesh away from the peel. Once removed, the grapefruit peel can be discarded. 

  5. Sprinkle each grapefruit half with ½ tsp ginger and 1 tsp honey, then place under a hot grill for 5 minutes, or until lightly caramelised. 

  6. To serve, top each half with a dollop of Greek yoghurt, a handful of granola and an extra drizzle of ginger preserve.
