Whether you’re decorating a show-stopping birthday cake, or you’ve got some pastries proving and you’re wondering how to nicely finish them, these crystallised rose petals are the perfect touch.

What’s more, they couldn’t be easier to make! And – let’s face it – that’ll earn you some serious kudos points too. Take a look at the easy method below.

  • 1 free-range egg light whisked
  • a fine paintbrush
  • saucer of caster sugar
  • edible rose petals


  1. To crystalise, simply hold the clean petals with your tweezers, then gently paint the egg white over the entire surface. 

  2. Rest the petal on a saucer filled with caster sugar, then sprinkle all over making sure there are no gaps left uncoated. Place the sugared petal onto a baking paper covered cooling rack to harden. 

  3. Repeat with all your petals and, when hardened, store in an airtight container separated by baking paper – no more than two layers high as the petals are very delicate. 

Top tip!
  • You can crystallise any edible flowers and leaves – try candied lavender and mint leaves.
