Step-by-step: Cinnamon pecan Danish pastries

Comforting, sweet and delicious, these Danish pastries with the nutty flavour of pecans are bound to be a hit with the family!

Ingredients

For the pastry

  • 1 packet of all butter rolled puff pastry
  • 1 free-range egg, lightly beaten, to glaze
  • granulated sugar, for sprinkling

For the filling

  • 100 g pecans
  • 3-4 tbsp dark brown sugar
  • 30 g cold unsalted butter, cubed
  • 5-6 tbsp maple syrup
  • 1 tsp ground cinnamon

For the glaze

  • 4-5 tbsp icing sugar
  • 1-2 tbsp milk, as needed

1. Preheat the oven to 220°C/Gas Mark 7. Line two large trays with baking paper.

2. Put all the ingredients for the filling in a food processor or blender. Pulse until the ingredients form a fairly coarse paste. Set aside until needed.

3. Unroll the puff pastry and cut into eight squares. Lay them on the prepared trays and lightly brush with a little beaten egg. Place 1 tbsp filling at the centre of each square.

4. Next, fold one corner over to the middle and bring the opposite over to form a little envelope. Brush the pastry with the beaten egg all over.

5. Sprinkle with a little granulated sugar and bake for about 12 minutes, turning the tray around about halfway. It is best to bake these in two batches if you can. Remove from the oven and cool on a wire rack.

6. In a small bowl, mix the icing sugar with a little milk until you have a thick but pourable glaze. Drizzle the glaze over the cooled pastries and sprinkle with a little icing sugar.

7. These are best eaten while they’re fresh.
