For a beautiful celebration cake in a hurry, what is your ‘go to’ design detail to wow?
I love to incorporate ruffles into celebration cake designs. An ombre ruffle wrap is a quick way to add some ‘wow’ to any cake.
Best tip for cake decorators wanting to move from a cake hobby to a cake business?
My tip would be to build a portfolio of your work, using dummy cakes to begin with, to demonstrate your skills.
Favourite cake decorating book?
I really enjoyed reading ‘The Painted Cake’ by Natasha Collins. The designs and techniques in the book are beautiful and I look forward to trying out some of the techniques.
Whose sugar flowers leave you speechless?
I love Jacqueline Butlers, of Petal Sweets, Sugar Flowers.
If you could make a cake for anyone, who would it be and why?
I would love to make a cake for a member of the royal family, maybe a future wedding cake for Prince George or Princess Charlotte!
What colours do you think will be hot for wedding cakes in 2017?
Rose gold definitely seems to be a popular colour with many of my upcoming 2017 brides.

My favourite source of inspiration is bridal flowers.
What is top of your cake career bucket list?
The biggest thing on my cake career bucket list has always been to run my own business, which I have been doing now for nearly five years!
