Last-minute recipes to enjoy in the sun

20th Apr 2018

Quick – it’s a Great British heatwave! It’s time to crack out those BBQs and invite friends and family over for a garden get-together. Once the charred meat and potato salad has been washed down with a nice glass of prosecco, it’s only right to want a sweet treat to finish the evening off. Here are our all-time favourite recipes that manage to combine those much-needed summery vibes within a super-easy and stress free recipe. After all, you want to be out there enjoying the sun too!

Coffee and coconut ice lollies
Children to the side – this one is definitely for the adults. A perfect cooling treat for the grown-ups at the party, these coffee and coconut ice lollies go down a treat once the sun’s gone down in the place of the traditional post-dinner coffee. Just be sure to make them a day ahead to ensure they’re frozen in time for your guests.

Very berry vegan cupcakes
Don’t run away at the sight of the word vegan – we promise that these are just as easy to make as any other cupcake!  This recipe swaps out the dairy and egg for substitutes you likely already have in your store cupboard, and the strawberry flavour packs a summery punch too. Also one to please the gluten-free people in your lives! Last-minute sun recipes

Chocolate, coconut and raspberry gateau
So, while this one is perhaps not the most beginner-friendly recipe in the world, it’s got to be one of the most fulfilling – especially when you consider the fact that it contains no dairy, nor any sugar. Spend some time the day before preparing this dessert, and you’ll surely have a crowd-pleaser on your hands. Last-minute sun recipes

Lemon curd and blueberry preserve freezer cake
The title might be a mouthful, but the method for this super-cool treat is anything but. What’s more there’s not an oven in sight! Combine rich tea biscuits with our layered recipe of yogurt, preserves and curds and pop in the freezer for around six hours – then boom. A delicious cooling treat for you and your guests to enjoy!
