Pantone Colour of the Year 2022

Lambeth method

Popularised by American Joseph Lambeth, the Lambeth method is a classic cake design that uses an over piping technique in royal icing to create intricate scrolls and garlands. We're seeing this classic technique making a comeback, which shows that all trends come back around!

Inspiration for cake trends can be found in the most surprising of places, but often it's taken from interior design. Colours, yes – but textures too. Cladding and panelling has been seen to be increasingly popular around the home, especially with lots of home renovations taking place during lockdowns. These have been adapted for cake, too! Adding texture and depth, all in edible form and as the popularity indoors grows, we're sure it'll grow for cake, too.

Yes, they've been around for a long time, but the trend keeps evolving and growing in popularity! Especially popular for doorstep deliveries, this box of treats isn’t going anywhere. In fact, they're particularly great for wedding favours, wedding dessert tables and party favours. Never plain – always highly decorated to suit the colour scheme or even with modelled characters on them.

Here at CD&S, we couldn’t decide which trend to feature here – so we had to go for both! We've seen that size has been going both ways – smaller tiered cakes and single tiers as people are keeping numbers low at events, but also big elaborate cakes as the world has been opening back up!

Depends on the point of view of the client, but no matter the size, 2022 is sure to see some beautiful cakes!

A new year always brings a new mindset for wanting to kickstart healthy eating. With lockdowns resulting in a lot less movement than usual and an increase in hobby baking, healthy alternatives were becoming increasingly popular (banana bread, anyone?!). Many people who are inclined towards a healthier lifestyle are opting for healthier alternatives, and ‘clean’ cakes are becoming more and more of a ‘go-to’ choice.
