Coconut cherry biscuits

  • 125 g The Groovy Food Company organic virgin coconut oil, solid (at room temperature)
  • 75 g golden caster sugar or xylitol
  • 1 free-range egg, beaten
  • 225 g plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 25 g cornflour
  • 85 g glacé or dried cherries, chopped
  • 3 tbsp desiccated coconut


Preheat the oven to 180ºC/Gas Mark 4. Line two trays with parchment.
Whisk together the coconut oil and sugar with electric beaters, until pale and creamy. Add a pinch of salt and the remaining ingredients, except the desiccated coconut and cherries. Whisk to combine until the mixture resembles breadcrumbs. Stir through the cherries, then use your hands to squeeze firmly to form a dough.
Shape into two 14cm (5½in) diameter logs. Wrap in clingfilm, twisting the ends like a cracker, then chill for 20 minutes.
Slice the dough into circles about 1cm (½in) thick, with a serrated knife, and space well on the trays. Scatter over the coconut and lightly push down on each biscuit with the palm of your hand.
Bake for 15 minutes until golden. Cool on the trays for 10 minutes, then transfer to a wire rack to cool completely.
