Kids always love to have fun with food and there’s a lot to be had with these fantastic fortune cookies!
Fortune Cookie Recipe
Preparation time 35 mins plus cooling - Baking time 8-9 mins per batch - Makes 10Ingredients
- 1 large egg white
- 1/2 tsp vanilla extract
- 2 tbsp sunflower oil
- 50g caster sugar
- 50g plain flour, sifted
- 2 tsp corn flour, sifted
- 2 tbsp warm water
- 10 mottoes written on 5mm strips of paper
Method
- Before you begin baking you will need to create 10 mottoes/messages to place inside the cookies. Mottoes need to be written on pieces of paper no taller than 5mm but they can be fairly long as they can be folded when placed inside the cookies.
- Preheat the oven to 160°C/140°C fan/gas mark 3. Grease a baking tray then line the base with baking paper. Place the egg white and vanilla in a mixing bowl and whisk until white and increased in volume to about three times the size. Mix in the oil and sugar and then the flours. Add the water and stir until smooth.
- It’s best to bake just two fortune cookies at a time as they need shaping whilst hot. So, place two tablespoons of the mixture onto the baking tray and spread out each with the back of the spoon to form a 10cm diameter circle. Bake for 8-9 mins until golden.
- Have your motto at the ready along with a mug or wide bowl and a muffin tin. Ask an adult to help you with the next bit; remove one of the baked cookies from the tray using a palette knife, place a motto on one half of the cookie (if it’s a long motto fold it up so it fits) then fold the cookie in half so the motto is sandwiched in the middle. Working quickly, gently press the curved edges of the cookie so they are sealed. Place the middle of the folded edge of the cookie onto the rim of the mug and gently push the sides of the folded edge down over the rim to create a crescent shape. Place the shaped cookie inside one of the holes in the muffin tin to and allow to cool. Quickly repeat with the other baked cookie.
- Repeat steps 4 and 5 until all of the mixture is used up. As soon as the cookies are cool, store in an airtight tin.
