This is quick, fun and with endless possibilities for toppings it can be tailored to everyone’s favourites. It tastes far better than bought pizza and costs less too!
Preparation time 20 mins plus 1 hour rising - Baking time 12-15 mins - Makes 4
For the dough:
- 400g plain flour
- 1 tsp salt
- 10g dried active yeast or 20g fresh yeast
- ½ tsp sugar
- 230ml lukewarm water
- 4 tbsp olive oil
- For the topping:
- 2 tbsp tomato puree
- 2 x ball mozzarella
- 1 tsp dried oregano
- Handful of fresh basil
- Freshly ground black pepper
- Olive oil to drizzle
- Sliced chorizo or pepperoni
- To make the dough, sift the flour and salt into a large bowl, then using a wooden spoon make a well in the centre of the flour. Mix the yeast with the sugar and 2 tbsp of the water stir and pour into the well. Add the olive oil and enough water to make a soft dough, gently bringing it together with your hand.
- Knead for 10 mins by hand.
- Place the dough in an oiled bowl and turn to to coat the dough in oil. Cover with oiled Clingfilm and leave in a warm draught free place until the dough doubles in size. This will take about 1 hour.
- Preheat the oven to 220°C/200°C fan/gas mark 7. Turn the dough out onto a board and knead for a minute. Cut the dough into quarters, then thinly roll each into a circle shape and place onto a greased baking sheet.
- Spread with the tomato puree, season and tear half a ball of mozzarella over each and drizzle with a little olive oil. Bake for 12-15 mins or until the crust is golden brown. Top with torn basil leaves and serve.
* The kids can enjoy adding all their favourite toppings as long as they are in a single layer so that the pizza base can cook evenly. We made ours with chorizo and roasted red peppers.
