Ingredients

  • 100 g dates, soaked in boiling water for 10 minutes
  • 100 g coconut sugar
  • 100 g ground almonds
  • 40 g cocoa powder or raw cacao
  • 20 g Lio Licious apple powder
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 4 tbsp almond butter
  • 150 ml almond milk
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract

For the topping

  • 3 tbsp almond butter
  • 1 tbsp coconut oil, melted
  • 4 tbsp maple syrup
  • 4 tbsp cocoa powder or raw cacao
  • 3 tbsp LioLicious diced apple pieces

Instructions

Soak 100g of dates in boiling water for 10 minutes.

Preheat the oven to 180C. Grease and line a 9x9in baking tin.

Add to a large mixing bowl: 100g of oat flour, 100g of ground almonds, 40g of cocoa powder or raw cacao, 100g of coconut sugar, 20g of Lio Licious apple powder, 1tsp of baking powder and 1tsp of ground cinnamon. Mix the dry ingredients together.

Drain the soaked dates and add to a food processor, along with 150ml of plant-based milk, 4tbsp of almond butter, 2 tbsp of coconut oil, 1 tsp of vanilla extract and blend until smooth.

Add the wet ingredients to the mixing bowl and fold in. Add extra milk to loosen mixture if necessary.

Spread the mixture out into the tin and bake for 20-25 minutes until firmed. Leave to cool in the tin.

In the food processor, add 3 tbsp of almond butter, 1 tbsp of melted coconut oil, 4tbsp maple syrup, 4 tbsp of cocoa powder or raw cacao and blend.

Once the brownie has cooled, spread the topping over to cover then cut into 9-12 pieces.

Sprinkle 3 tbsp of Lio Licious diced apple pieces over the topping to add a zing of apple.
