Chocolate peanut butter banana bread

Banana bread is a favourite in many households. Not only because it uses up those over-ripe bananas that have been sitting in the fruit bowl for a couple of weeks, but because it's a delicious treat that's a hit with all the family. This peanut butter banana bread recipe however, mixes things up a bit. Take your normal banana bread, and add chocolate, and peanut butter, and you know you're in for a right treat!

Ingredients

  • 300 g mashed ripened bananas
  • 125 ml melted butter
  • 2 large eggs (lightly beaten)
  • 1.5 tsp vanilla extract
  • 85 g SKIPPY® Smooth Peanut Butter (warmed)
  • 128 g plain flour
  • 90 g dark chocolate chips
  • 50 g cocoa powder
  • 156 g sugar
  • 1 tsp Bicarbonate of Soda
  • 0.75 tsp baking powder
  • 0.5 tsp salt

Instructions

Heat oven to 180 degrees Celsius (Gas Mark 4).

In large bowl, stir together banana and the other 4 wet ingredients.

In separate bowl combine flour and remaining dry ingredients. Stir flour mixture into banana mixture until blended.

Transfer to a lightly greased 21 x 11 x 6 cm inch loaf pan.

Bake 45 to 55 minutes, or until a cocktail stick or skewer inserted in centre comes out clean.

Cool completely on wire rack 20 minutes.

Drizzle with warm peanut butter, if desired.
