Gluten Free Apple Loaf Recipe

A moreish Autumn bake, this sweet loaf is packed with apples and is also gluten-free!

A moreish Autumn bake, this sweet loaf is packed with apples and is also gluten-free!

You will need:

For the Decoration:

  • 140g butter or dairy-free margarine
  • 140g light brown sugar
  • 3 medium free range eggs
  • 140g plain Free From Fairy flour
  • 2 tsp mixed spice
  • a generous tsp of cinnamon
  • 1 1/2 tsp gluten-free baking powder
  • 2 tbsp milk or dairy-free milk
  • 2 red apples peeled, cored and chopped
  • extra light brown sugar

Grease and line a 1kg (2lb) loaf tin and pre-heat your oven to 160C/140C fan/gas mark3

Cream the butter or margarine with the sugar until pale and fluffy.

Add the eggs and beat again. Do not worry if the mixture separates.

Combine the dry ingredients in a mixing bowl and stir well.

Add the dry ingredients and milk to the wet ingredients, and beat to combine.

Finally stir through the apple pieces.

Scoop the mixture into the prepared loaf tin and bake in the oven for 50 - 60 minutes until a skewer inserted into the middle comes out clean.

Allow to cool before scattering the top of the cake with more light brown sugar
