Honey madeleines

These honey madeleines not only look perfect with their defined lines and delicate humps, they taste divine (and aren't as complicated to make as you might think). Take a look at our recipe below to create your own!

Ingredients

  • 3 eggs
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 2 tbsp honey
  • 140 g caster sugar
  • 140 g plain flour
  • 1 tsp baking powder
  • 140 g unsalted butter (melted and slightly cooled)

Preheat the oven to 190˚C/170˚C fan/gas mark 5 and lightly grease 24 holes in two standard sized madeline tins, you can use non-stick baking spray or melted butter and a pastry brush and then flour.

Place the eggs, egg yolk, vanilla extract and sugar and honey into a large bowl and whisk with an electric hand or in a standalone mixer until very pale and thick. This will take about 5 mins.

Either put in a piping bag or spoon the mixture evenly into the prepared tins, filling to approx three quarters full.

Bake in the preheated oven for 8-10 mins, until risen and golden. Remove the cakes carefully from the tins and cool on a wire rack. Madeleines are best served fresh, the day they are made.
