Just before Harry’s first birthday, his mum Louise noticed he was doing ‘head nods’ where he dropped his head. On holiday in Spain, Louise noticed they were happening more and more. A doctor suggested it could be epilepsy so Louise flew home with Harry on an emergency flight and went straight to A&E where the diagnosis was confirmed. Harry’s Special Macadamia Nut Cookie Recipe

Makes one cookie – multiply by six to create a batch of six and so on

Ingredients:

  • 6g unsalted butter
  • 8g eggs
  • 6g Macadamia nuts
  • 4g Milk chocolate chips
Method
  • Pre-heat the oven to 180 degrees
  • Soften the butter, but don’t let it melt – you need it to be soft so it holds the nuts together
  • Finely blend the nuts
  • Whisk together with the butter and eggs and add in the blended nuts
  • Fold in the chocolate chips
  • Line a baking tray with baking paper, and spoon the mixture onto the tray – making sure to leave a good few centimetres in between so they don’t run into each other when they bake
  • Bake in the oven for ten minutes
