Tiramisu cupcakes

This bake combines two of our favourite desserts – cupcakes and tiramisu! We simply cannot get enough of them.

Who said cupcakes and tiramisu have to be separate? Make these crumbly, creamy tiramisu cupcakes with this great recipe from Reka Csulak from Holy Whisk Blog.

For the batter

  • 300g (10½oz) flour
  • 75g (2¾oz) sugar
  • 75g (2¾oz) muscovado
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • a pinch of salt
  • 1 tbsp instant coffee (optional)

For the wet ingredients

  • 75ml (2¾fl oz) espresso, room temperature
  • 1 free-range egg
  • 150ml (5¼fl oz) milk
  • 110ml (3¾fl oz) oil
  • 1 tsp vanilla extract

For the tiramisu cream

  • 180g (6¼oz) Italian mascarpone
  • 50ml (1¾fl oz) espresso, chilled
  • 250g (8¾oz) icing sugar
  • 30ml (1fl oz) dark rum
  • ½ tsp cinnamon
  • 150ml (5¼fl oz) double cream

To serve

  • cocoa powder
  • café curls


For the muffin batter

Preheat the oven to 190°C/Gas Mark 5. Combine the dry ingredients in a bowl and mix the wet ingredients in a separate bowl.
Gradually incorporate the dry ingredients into the wet ingredients. The batter should be more like a rough mixture than a perfectly smooth one to avoid overdeveloping the gluten.
Line a 12-hole medium muffin tin with paper cups or cases and divide the batter between the holes.
Bake the muffins in the oven for about 25 minutes.
Place the muffins on a cooling rack and let them cool completely to room temperature before covering with the coffee-mascarpone cream (below).

For the tiramisu cream

Soften the mascarpone using a hand mixer, then add the espresso, dark rum and cinnamon.
Gradually add the icing sugar and continue the mixing. For a stiffer consistency, add more icing sugar.
Whip the double cream, then gently fold in the coffee-mascarpone mixture.
Insert a large round piping tip in a piping bag, fill in the cream and decorate the top of the muffins.
If you prepare the cupcakes a few hours before a party or event, make sure to place them in the fridge and decorate just before serving.
Sprinkle some cocoa powder on the top of the cupcakes.
Use cafè curls for decoration.
