Cola Cupcakes

Preparation time 30 mins Baking time 25-30 mins Makes 12 For the cupcakes: 200g self-raising flour 50g cocoa powder 250g caster sugar 2 eggs 100ml vegetable oil 2 tsp vanilla extract 300ml cola For the frosting: 100g butter 2 tbsps cocoa powder 50ml cola 250g icing sugar, sifted Cola bottles for decoration Method: 1 Line a 12 hole cupcake pan with paper liners and preheat the oven to 180˚C/160˚C fan/gas mark 5. 2 In a large mixing bowl, sift together the self-raising flour and cocoa powder. Add the caster sugar and stir well to combine. 3 Whisk together the eggs, vegetable oil and vanilla extract. Make a well in the centre of the dry ingredients and pour in, followed by the cola. Mix together to form an even batter working out any lumps with a spoon. 4 Transfer the mixture to a jug and pour into the paper cases filling each three quarters full. Bake in the oven for 25-30 mins until well risen and slightly springy to the touch. Allow to cool in the tray for 5 mins before transferring to a wire rack to cool completely. 5 To prepare the frosting, add the cola, butter and cocoa powder to a pan and heat gently until the butter has melted. Stir well to combine fully and remove from the heat. Sift in the icing sugar and mix well. Transfer the frosting to a bowl, cover with clingfilm and allow to cool and set. 6 Once fully set and thickened beat the frosting well. Add to a piping bag fitted with an open nozzle (1.5cm). Pipe rounds of cola frosting to the top of each cupcake and finish with a cola bottle. Serve. TIP: Make the frosting in advance of the cupcakes as it needs time to cool and fully set before using. Alternatives: Cherry Cola makes a great alternative in these cupcakes too!
