Try these simple cupcakes decorated with sugar pearls to create a chic vintage look – it's an easy three step process and the end result will look effortless! For the vanilla cupcakes 110g butter, softened 110g caster sugar 110g plain flour 2 tsp baking powder ¼ tsp salt 1tsp vanilla extract 2 eggs For the vanilla frosting 280g icing sugar 140g butter, softened 1-2 tbsp whole milk For the decoration white sugarpaste pearl mould pearl lustre small paintbrush Pre-heat the oven to 190C/Gas mark 5 and line a 12-hole muffin tin with cupcake cases. For the vanilla cupcakes 1 Whisk together the butter, sugar, flour, baking powder and salt until smooth. Then add the eggs and vanilla extract and mix until smooth again. 2 Spoon the mixture into the black paper cases and bake for 20 minutes until well risen and springy to touch, then put on a wire rack to cool. For the vanilla frosting 1 Sift the icing sugar and beat together with the butter and milk until smooth. For the decoration 1 Firstly, roll out the sugarpaste with your hands until it’s roughly the size of the mould. Then press into the mould, removing any excess sugarpaste as you go along. Don’t be scared to push the sugarpaste fully into the mould – it will come out! In my opinion silicone moulds for pearls work best, I’ve tried plastic ones but haven’t had flawless pearls like with the silicone mould.
2 Gently bend the mould open and take out the sugar pearls. Then take some pearl lustre and a small paintbrush and brush onto the pearls. 3 To finish, place around the edge of your iced cupcakes. I have put them on top of the buttercream, but pearls also look really pretty on domed cupcakes – which I will be blogging about later this year! TOP TIP Rub a tiny amount of petal base into the mould to begin with to stop the pearls from sticking.
