Valentine's Day Cupcake Recipe

Try these romantic Valentine's Day cupcakes – the decoration is simple but effective, and you can change the colours and flavours to suit you! A great recipe to get you inspired from Sophie Victoria.

Makes 12 For the Vanilla Cupcakes 80g (3oz) unsalted butter, softened 280g (100oz) caster sugar 240g (8½ oz) plain flour 1 tbsp baking powder 1/4 tsp salt 240ml (8½ fl oz) milk ½ tsp vanilla essence 2 large free-range eggs

For the Vanilla Frosting 500g (1lb 2oz) icing sugar 160g (5½  oz) unsalted butter, softened 50ml (1¾fl oz) whole milk ½ tsp vanilla essence To Decorate red sugarpaste heart cutter letter cutters red edible glitter 1.     Preheat the oven to 190C/Gas Mark 5 and line a 12-hole muffin tin with red paper cases. 2.     For the vanilla cupcakes, whisk together the butter, sugar, flour, baking powder and salt until smooth. 3.     Beat in the eggs, milk and vanilla extract and mix on a medium speed until smooth again. 4.     Spoon the mixture into the paper cases and bake in the oven for 20 minutes, until well risen and springy to touch, then put on a wire rack to cool. 5.     For the vanilla frosting, sift half the icing sugar, add the butter and beat until smooth. Then add in the remaining icing sugar, milk and vanilla essence and beat on a high speed until soft. 6.     Spoon the frosting into a piping bag and pipe large swirls on top of the cupcakes. 7.     To decorate, roll out the red sugarpaste on a surface lightly dusted with icing sugar and cut out your chosen message. 8.     Finally sprinkle red edible glitter onto the decorations (enough to cover) and then gently place onto the vanilla frosting 458 valentines day Sophie Victoria Cupcakes is based in Hertfordshire and creates cupcakes for all occasions, such as Weddings, Anniversaries, Birthdays, Baby showers and much more.
