Orange-cinnamon baked custard

  • 500ml (18fl oz) single cream
  • 2 free-range eggs plus 2 free-range egg yolks
  • 90g (3oz) golden caster sugar
  • ½ tsp ground cinnamon
  • grated zest of 1 small orange


Preheat the oven to 150C/Gas Mark 2.
Put the eggs, egg yolks, sugar, cinnamon and orange zest into a bowl and whisk until light and fluffy.
Heat the cream in a saucepan until hot, but not boiling.
Slowly add the hot cream to the egg mix, whisking continuously.
Pour the mix into an ovenproof dish, then put the dish into a deep baking tray.
Fill the baking tray with hot water to come halfway up the custard dish.
Bake in the oven for 45 minutes or until set, then sprinkle with a little cinnamon/sugar mix to serve.
