Ingredients

  • 2 small/medium-sized sweet potatoes
  • 6 tbsp gluten-free flour
  • 1/2 cup (118ml or 4fl oz) milk or alternative such as coconut or oat milk
  • 5 tbsp Two Chicks egg whites
  • 1 tsp butter
  • a pinch of cinnamon

Instructions

Peel 2 small / medium potatoes and boil in a saucepan until soft.

Once boiled, mash with a potato masher.

Add 6 tbsp gluten-free flour, 1/2 cup milk or milk alternative, 5 tbsp of Two Chicks egg whites, 1tsp of butter, a pinch cinnamon and then mix into a batter.

Heat your saucepan or waffle machine on a medium heat – if it isn’t a non-stick pan then add a little coconut oil or butter to prevent sticking when cooking.

Plate up your waffles or pancakes and top with blackberry compote and coconut cream for the perfect weekend brunch dish. Alternatively store them in the fridge for a couple of days and serve with something savoury for a high protein mid-week dinner.
