Ingredients

  • vegan butter, for greasing

Dry ingredients

  • 150g (51/2oz) self-raising flour
  • 2 tbsp sugar
  • 10g (1/4oz) baking powder
  • ½ tsp salt

Wet ingredients

  • 240ml (81/2oz) soya milk
  • 1 tbsp apple cider vinegar
  • ½ tsp vanilla extract

To serve

  • maple syrup
  • blueberries and banana slices, or fruit of your choice

Instructions

Place all the dry ingredients in a large bowl and whisk to combine.

Add the wet ingredients to the dry mixture and whisk together, taking care not to overmix.

Let the batter sit for a couple of minutes while your pan/griddle heats to medium-low.

When your cooking surface is heated, lightly grease it using a little vegan butter, then pour about one-eighth of the batter into the pan –a ladle or mug is perfect for this.

When the top begins to bubble, flip the pancake and cook until golden and puffy.

Serve warm with pure maple syrup, fresh blueberries, banana slices, or any fruit you fancy!
