The end of summer isn't all doom and gloom... it also means blackberry season! Bake this delicious blackberry clafoutis from Alpro, a french flan-like dessert.

Ingredients

  • 25 g unsaturated fat spread
  • 4 free-range eggs
  • 50 g icing sugar
  • 75 g plain flour
  • 220 ml Alpro Soya Unsweetened drink
  • 250 g blackberries
  • 200 g Alpro Simply Plain Big Pot

Instructions

Preheat the oven to 200°C/Gas Mark 6. Grease the baking dish with the unsaturated fat spread.

Beat the eggs with the icing sugar until well combined. Add in the flour and Alpro Soya Unsweetened drink and whisk until you have a smooth batter.

Spread the blackberries evenly over the base of the greased baking dish. Pour over the batter and bake the clafoutis for 20-25 minutes until the top is golden brown, or a knife comes out clean when you insert it in the middle.

Let it cool down and serve with the Alpro Simply Plain. Just perfect!
