Ingredients

For the rocky road

  • 340 g dark chocolate
  • 170 g unsalted butter
  • 8 digestive biscuits
  • 60 g mini marshmallows

For the decoration

  • 20 g Smarties
  • 8 edible teeth sweeties
  • 30 g ready-rolled black fondant icing
  • 30 g orange ready-rolled fondant
  • 12 edible eyes
  • 40 g orange candy melts
  • 40 g green candy melts

Instructions

Line a 20x20cm (8x8in) square brownie tin with greaseproof paper.

In a bowl over a pan of hot water, melt the dark chocolate and butter together.

Once melted, remove the bowl and place on a heatproof mat. Place the digestive biscuits in a sandwich bag and, using a rolling pin, smash them to small chunks around 1-2cm (1⁄2-3⁄4in) in diameter.

Pour the broken biscuits together with the marshmallows into the melted chocolate mixture. Stir this gently as to not melt the marshmallows. Once everything is fully coated, pour into the greased baking tray.

Melt the orange and green candy melts in little bowls using the same method you used to melt the dark chocolate. Once melted, use a spoon to drip the orange candy melts onto the rocky road using a sweeping motion from side to side. Once you’re happy, turn the rocky road 90 degrees and use the green candy melts to do exactly the same.

Roll out the black fondant icing using a rolling pin, then use a bat cutter to make individual bats. Roll out the orange fondant to create mini pumpkins. Place these onto your rocky road.

Place the eyes, teeth and smarties over the top to create a really fun and decorative rocky road. Chill in the fridge for at least a couple of hours until the chocolate has completely set.

Cut into square pieces once it’s ready, then serve!
