Almond butter flapjacks

A quick and easy recipe for some delicious chocolate and almond butter flapjacks – they'd wash down nicely with a cup of tea!

Ingredients

  • 400 g oats
  • 125 g honey
  • 125 g almond butter
  • 4 tbsp cacao powder
  • 75 g coconut oil
  • 50 g dark chocolate
  • 1 tbsp chopped almonds

Instructions

Preheat the oven to 180oC/Gas Mark 4. Line a 20cm (8in) square tin with parchment paper.

In a large bowl, mix the oats and cacao powder. Add the almond butter, honey and coconut oil to a microwave-safe bowl and heat until melted.

Add the almond butter mixture to the oat mixture and stir well until evenly mixed.

Press the mixture into the tin, pressing down well with the back of a spoon. Bake for 15 minutes in the preheated oven.

Remove from the oven and allow to cool completely. Once cool, melt the dark chocolate and drizzle on the top of the flapjacks.

Sprinkle over the chopped almonds and place in the fridge for 30 minutes to allow the chocolate to set.

Slice into squares and serve.
