Who can resist the smell of freshly baked scones? Not us!

Slathered in butter, or served with a lick of clotted cream and jam, you can’t go wrong with some perfectly golden scones fresh from the oven. Here, you’ll find Lancashire Farm Dairies’ scone recipe – and it’s a cracker!

Servings 4 scones

Ingredients

  • 350 g self-raising flour plus more for dusting
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 85 g cold butter cut into cubes
  • 4 tbsp golden caster sugar
  • 150 g Lancashire Farm Natural Bio Yoghurt
  • 4 tbsp full-fat milk
  • 1 tsp vanilla essence
  • 1 free-range egg beaten with 1tbsp milk, to glaze

Instructions

  1. Preheat the oven to 220°C/Gas Mark 7.

  2. Warm the milk, yogurt and vanilla together in a pan for just over a minute.

  3. Put the flour, salt and baking powder together in a bowl and mix well, then create a well in the middle of the bowl.

  4. Add the cubed butter, and rub into the flour mix with your fingertips until it resembles breadcrumbs. 

  5. Pour the other mixture into the well in the middle, then work the mixture to form a smooth dough.

  6. Tip the dough onto a work surface and roll out ready to be cut. Press out 4 scones with a cutter or use the top of a glass tumbler. The scones should be roughly 4cm (1½in) thick. Roll together the leftover dough and repeat until all the dough is used.

  7. Brush the tops with egg wash, then place in the oven for 12 minutes, until risen and golden.

  8. Leave for 5 minutes to cool before serving with jam and clotted cream.
