Try a traditional Russian recipe known as Sharlotka, a deliciously moist apple cake by Judit Horvath. 

Containing ingredients you will definitely have in your cupboard, the Shartloka cake is the perfect recipe for you to bake. This light dessert, balanced with scrumptious bites of apple is such an easy sponge to make and only has six ingredients! Happy Baking!

  • 6 large free-range eggs, at room temperature
  • 200 g sugar
  • 160 g flour
  • a pinch of baking powder
  • 450 g green apples, peeled, cored, cut into small dice or slices
  • icing sugar for dusting


  1. Preheat the oven to 170°C/Gas Mark 3. Grease a 20-22cm (8in) baking tin.

  2. Beat the eggs and sugar in the bowl of a stand mixer on high speed for 5-8 minutes until thick and fluffy.

  3. Whisk the flour and baking powder together, then sift into the egg mixture in three parts, folding it in with a spatula gently, so not to overmix.

  4. Fold in the diced apples (reserving a handful of slices) until just combined, then transfer the batter to the prepared baking tin.

  5. Decorate the top of the cake with the reserved apples, then bake for about 1 hour, until the top is golden brown.

  6. Remove from the oven and leave to cool in the tin for 15 minutes, then slide a knife around the sides of the cake to loosen it and remove from the tin. Once cool, dust with icing sugar.
