Knead to dough webinars: Focaccia and higher hydration doughs with James Hillery

Ready, get set, knead! In this online session, James Hillery will be covering how to make higher hydration doughs with advice on different kneading approaches.

In a series of three 'doughy' online sessions, James Hillery, who featured in Season 8 of The Great British Bake Off, will be sharing his knowledge and top tips for how you can achieve the perfect dough and loaf!

This second live webinar will build on the skills learnt in the first webinar, making a focaccia dough that has a higher hydration, a wetter and stickier dough to work with, which gives that traditional open bubbly crumb. We will also talk about different kneading approaches used for sourdoughs and “no knead“ breads.

Following the live session, you'll receive a link to watch the webinar recording and download James' recipe and top tips sheet.

About James Hillery

James Hillery

James was a contestant on Series 8 (2017) of The Great British Bake Off. The series proved to be Channel 4’s biggest success in 32 years as the show moved from the BBC, averaging around 8–9 million viewers a week. More recently, James returned to the tent for the 2020 Christmas Bake Off Special.

James has a passion for baking, which grew from learning to bake with his father as a child. 

James loves all aspects of baking including teaching, developing and writing recipes and presenting at food festivals. He is a judge for the World Bread Awards and the Great Taste Awards.

His recipes are delicious and focus on flavour, fun and seasonal produce. His goal is to ensure that the recipes are accessible to all and achievable by everyone.
