Microwave mug cakes

  • 60 g caster sugar
  • 60 g self-raising flour
  • 60 g Pure Irish Creamery Butter
  • 1 medium free-range egg
  • 10 ml milk
  • 1 tsp vanilla extract
  • whipped cream or buttercream icing, to serve (optional)


  1. Add all the ingredients to a food processor and blitz for a couple of minutes until combined.

  2. Divide the mixture between 2 microwave-safe mugs, allowing a little space for the cake to rise slightly.

  3. Put one cup in the centre of the microwave and cook for 1½ minutes until risen, then carefully remove from the microwave.

  4. Repeat with the other mug. Allow to cool, then decorate with whipped cream or buttercream.
