Baby Birthday Cake

This adorable cake is perfect for a baby shower and is sure to impress your client or guests!

The skill to this cake by Hannah Wiltshire from Bath Baby Cakes lies in achieving smooth, crisp lines, so don’t rush and allow the cake plenty of time to chill in the fridge before covering with icing.

Baby Birthday Cake

You will need:

For the cake:

  • 2-tier cake: top tier covered in white sugarpaste: 10cm (4in) diameter x 10cm (4in) high, bottom tier dowelled and covered in pale blue sugarpaste: 15cm (6in) diameter x 10cm (4in) high

To decorate:

  • 250g (9oz) pale blue and deeper blue ready-to-roll icing
  • white, pale blue and deeper blue royal icing
  • icing sugar
  • pale blue flower/modelling paste
  • pale blue powdered food colouring

Equipment:

  • kebab stick
  • sharp knife/scalpel
  • greaseproof paper
  • 5cm (2in) circular pastry cutter
  • 10cm (4in) circular cake tin
  • clingfilm
  • 20cm (8in) diameter cake drum
  • large rollling pin
  • mini rolling pin
  • water
  • medium fine-tipped paintbrush
  • large flat-tipped paintbrush
  • disposable piping bags
  • fondant smoother
  • white ribbon, to trim

Method:

  1. On a surface dusted with icing sugar, roll out the modelling paste to a thickness of 1cm (½in). Using a sharp knife, cut the paste into a number ‘1’ about 7cm (2¾in) tall and 1cm (½in) wide. Wet the kebab stick with water and poke into the ‘shaft’ of the number 1, easing it in until it feels like it will support the weight of the number when the modelling paste has dried. Set the topper aside on some greaseproof paper to firm up.
  2. To prepare the roundel with the child’s initial, first create a platform for it to dry into a curved shape so that it will fit snugly onto the side of the cake. Turn the cake tin onto it’s side so that the curved side is uppermost. Stop it rolling around by sticking two blobs of scrap sugarpaste on either side of the tin and cover the uppermost curved side with a piece of clingfilm. Roll out the modelling paste to a thickness of about 2mm, cut out a circle and place the circle onto the clingfilm to dry.
  3. Allow the topper and the roundel to become as dry as possible as this will make them easier to handle.
  4. Fill a disposable piping bag with white royal icing, snip off the end so that there is just a tiny hole for the icing to come through and pipe the child’s first initial into the centre of the circle. Fill two more disposable piping bags with pale blue and deeper blue icing and pipe small pearls of alternating white, pale blue and deeper blue on the number 1. Allow to dry.
  5. Using the wide, flat-tipped paint brush, dust a little pale blue food colouring powder around the base of the top tier, fading it as you brush upwards to create a subtle ombre ‘sky’ effect.
  6. Cover the cake drum with pale blue sugarpaste using the mini rolling pin and fondant smoother.
  7. Take the mini rolling pin and roll out a thin ribbon of pale blue sugarpaste long enough to go around the bottom tier of the cake. Using a sharp knife, cut along the bottom of the length to create a straight edge. Then cut a wavy top edge for the train to sit on. Brush the base of the cake with a little cold water, then attach the strip to the cake, cutting it to fit at the back of the cake.
  8. Roll out some deeper blue sugarpaste, cut simple rectangles and shapes to form the train carriages and attach to the cake in the same way. Pipe nuts, bolts and details as simple pearls as shown in the photograph. Pipe joined white pearls to represent steam puffing from the locomotive and pipe more puffs of steam on the top tier as well.
  9. When the circle with the initial is dry, attach to the top tier with a little royal icing and pipe alternating white, pale blue and deeper blue pearls around the circumference of the circle.
  10. When the topper is dry, stick into the cake so that the kebab stick is concealed inside the cake (you may need to cut it if it is too long). If you wish, secure in place with a dab of royal icing.
  11. Trim the base of each tier with ribbon to disguise the joins and stick ribbon to the edge of the cake drum if you wish.

Tips:

  • Make sure your birthday boy or girl isn’t given the topper to play with as they may hurt themselves with the sharp end of the kebab stick.
  • Cover the cake drum the day before if you have time, so the icing doesn’t mark when you place the cake on top.
