Blueberry muffins
Blueberry muffins recipe by Berry World
A quick and easy recipe for a classic… bake these yummy blueberry muffins in just half an hour!

Blueberry muffins
Servings 10
Ingredients
- 300 g self-raising flour
- 1 tsp baking powder
- 150 g sugar
- 1 grated zest of 1 lemon
- 150 g blueberries
- 1 free-range egg
- 225 ml milk
- 50 ml vegetable oil
Instructions

Preheat the oven to 200°C/ Gas Mark 6 and line a muffin tin with 10 cases.

Put the flour, baking powder, sugar, lemon zest and blueberries into a bowl and stir to combine.

In a jug, mix the egg, milk and vegetable oil with a fork until combined.

Pour the wet ingredients into the dry ingredients and stir. Don’t overmix, it’s fine to have a few lumps.

Divide between the muffin cases and bake for 20 minutes until they are risen and pale gold.

Leave to cool, then keep in an airtight tin for up to 3 days.
