St Patrick's Day cupcakes

Happy St Patrick's Day to all our Irish readers – we'd like to celebrate by sharing these four fantastic cupcake toppers by Jen's House of Cakes!

You will need

  • white modelling paste
  • green modelling paste
  • black modelling paste
  • yellow modelling paste
  • red modelling paste
  • blue modelling paste
  • green buttercream
  • round or fluted cutter
  • heart-shaped cutter
  • cloud-shaped cutter (optional)
  • sugar glue or cooled boiling water
  • edible glue
  • edible gold balls
  • tool/knife

Instructions

Make a four-leaf clover topper

Roll out white modelling paste to about 3mm thick.

Using a round or fluted cutter, cut a disc of paste.

Roll out green paste fairly thinly.

Cut out three small hearts.

Attach the three hearts to the disc with a little sugar glue or cooled boiled water.

To make the stem, roll green paste into a small, thin sausage tapered at one end and attach to the disc.

Using a tool or the back of knife mark a little indent into the centre of each heart.

Assemble your clover, then attach to a plain white topper with a little water. Place on top of a swirl of green buttercream to finish!

Make a Leprechaun hat

Using your hands, roll green modelling paste into a ball and then into a thick sausage.

Press end onto board to flatten the ends.

Roll black paste very thinly and cut into a long thin strip.

Attach around one end of the sausage using edible glue, making the join at the back.

Roll the remaining green paste thickly and cut a disc bigger than the width of the hat and curl up one side using your thumb.

Glue the two pieces together.

To create the buckle, thinly roll yellow paste and cut out a small square and another small square out of the middle.

Attach to the front of the hat. You can now place your hat on top on your buttercream.

Make a pot of gold decoration

Using your hands, roll black modelling paste into a ball and set aside.

Roll a thin sausage of black paste and attach around the top edge of the pot with edible glue.

Brush edible glue inside the ring of paste and sprinkle on edible gold balls,

Sprinkle a few extra on top of the buttercream

Make rainbows with gold decoration

Roll out a thin sausage of red modelling paste.

Bend into an arch shape on the board and brush the inside edge with edible glue.

Roll out a thin sausage of yellow paste, slightly shorter than the red and attach to the arch of red paste.

Repeat with the green and blue paste.

Flatten the rainbow slightly with fingertips to make colours adhere to each other.

Use a sharp knife to square off both ends of the rainbow.

Cut a cloud using cloud cutters (or cut freehand with a sharp knife) and attach to one end of the rainbow with edible glue.

Brush edible glue over the other end of the rainbow and press edible gold balls into the paste (or if you can’t get your hands on these, roll tiny balls of yellow paste and press onto the board to flatten so they look like coins and then attach to the rainbow).
