Gorgonzola and Walnut Biscuits

We just LOVE these gorgonzola biscuits, a cracking recipe…. so savoury, so buttery, so good!   Preparation time: 10 mins Baking time: 10-12 mins plus 1 hour chilling Ingredients | Makes 24
  • 150g plain flour
  • 60g butter, salted
  • 1 tsp baking powder
  • 1 tsp caster sugar
  • 2 tbsp sunflower oil
  • 2-3 tbsp water
  • 75g finely chopped walnuts
  • 60g gorgonzola
Method:
  1. Preheat the oven to 200°C/ 180°C fan/ gas mark 5.Finely chop the walnuts and crumble the gorgonzola into small pieces, set to one side.
  2. Combine the plain flour, baking powder and caster sugar in a large bowl. Dice the butter and rub into the dry mixture using your fingertips until it resembles fine breadcrumbs. Add the chopped walnuts and gorgonzola and mix until evenly distributed. Make a well in the centre and add the sunflower oil and 2 tablespoons of water. Mix together using a table knife to bring the dough together. Add a little more water if the mixture is too dry.
  3. Once the dough is combined roll out between two sheets of baking paper to a depth of 3mm. Chill the rolled dough in the fridge for one hour or until firm.
  4. Cut biscuits from the chilled dough and place on a lined or greased baking tray. Bake in the oven for 8-10 mins until golden brown. Allow to cool for 5 mins on the tray before transferring to a wire rack to cool completely. Serve and enjoy the compliments!
Alternatives: Any flavoursome cheese can be used in place of the gorgonzola. Crumbly cheeses work particularly well but hard cheeses can be grated into the mixture if preferred.
