Matcha Green Tea and Rose Shortbread Notes

Ingredients
For the matcha green tea shortbread:
- 185g plain flour, sifted
- 125g unsalted butter, cubed
- 60g golden caster sugar
- 1 tsp matcha green tea powder
- Couple drops green food colouring - optional
For the rose scented shortbread:
- 185g plain flour, sifted
- 125g unsalted butter, cubed
- 60g golden caster sugar
- 1 tsp rose essence
- Couple drops pink food colouring – optional
- Rose sugar - optional
Method
- For the matcha shortbread, put the flour, butter, sugar, matcha green tea powder and food colouring in a bowl and rub between your fingers to combine before bringing together to form a dough. Make sure you have blended in the food colouring evenly if using, you can check by slicing through the dough.
- Roll out the matcha dough onto a lightly floured surface to the thickness of approx 5mm. Cut into 4cm squares and transfer to a baking tray lined with baking paper. Leave to rest in the fridge for at least 1 hour. Repeat with the rose dough.
- Preheat the oven to 160˚C/140˚C fan/gas mark 3. Stamp letters or words of your choice into the shortbread using stamps or a letter press – we chose the words ‘rose’ and ‘matcha’. Bake for 20-25 mins until lightly golden. Remove from the baking tray and leave to cool on wire racks. Sprinkle the rose shortbread with a little rose sugar for extra flavour and decoration.
