Do you find as Christmas approaches, you think back to last year and how you made the perfect Christmas cake? We're sorry to tell you the bad news... but WE'VE got the best Christmas cake recipe out there, so you can't have done!

Now, because we believe that sharing is caring, we're happy to let you have this super easy Christmas cake recipe and run away with it! We've provided you with an extensive list of ingredients, but we know not all will work for the whole family (we all know what Granny is like after too much brandy!). So, feel free to chop and change as you please, perhaps changing the figs for dates (if you're a little delicate in the stomach area!) or throwing in a surpise with some spiced rum. Just don't tell Granny! 





You will need:


  • 250g sticky dried figs
  • 150g raisins
  • 50g candied peel
  • 50g glacé cherries
  • 175g soft unsalted butter
  • 175g dark brown muscovado sugar
  • 175ml runny honey
  • 125ml brandy
  • 3 oranges (juice and zest)
  • 2tsp mixed spice
  • 4tbsp good quality cocoa - such as Green & Blacks
  • 1tsp chocolate extract - I use Nielsen Massey
  • 3 large eggs (beaten)
  • 150g plain flour
  • 75g ground almonds
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda


The best Christmas cake recipe:


Preheat oven to 150°C/125°C fan/gas mark 2 then grease and line the sides and bottom of a 20cm round and 9cm deep, loose-bottomed cake tin with a double layer of baking parchment ensuring the paper rises above the tin edge by 9cm.


In to a large wide pan, add the fruit, butter, sugar, runny honey, brandy, orange juice, zest, spice and cocoa and bring to a gentle boil and stir. Simmer for ten minutes then remove from heat and leave to cool for an hour.


Add the beaten eggs, flour, ground almonds, baking powder and bicarbonate of soda and stir until thoroughly combined.


Pour the batter into your prepared cake tin and bake for two hours. When cooked the top of the cake should be firm, glossy and sticky.


Leave to cool completely on a wire rack before taking out of the tin and store wrapped in baking paper and cling film in an airtight tin.

  • For a subtle coffee note, try adding a shot (or more - we all need it by Boxing Day! This pairs beautifully with a shot (or more) of Tia Maria instead of brandy (or as well as... go on, it's Christmas after all!)
  • Speaking of booze, whisky, rum, amaretto or southern comfort all work beautifully with this Christmas cake recipe. Or, you can go really naughty and throw in some Irish cream... at Christmas, it works with anything!
  • You can change the lightness or darkness of the cake, simply make a darker cake by changing the fruit for more raisins and currants, or lighter by adding nuts such as almonds, walnuts or pecans.
