Apple Fudge Cake
Preparation time: 20 mins Baking time: 1 hour 20 mins Serves 10-12 450g self raising flour 230g soft butter/spread 230g soft dark brown sugar 2 tsp baking powder 2 tsp mixed spice 2 tsp ground cinnamon 4 eggs 4 tbsp milk 2 apples (one will be cored, quartered and sliced in to approx 2mm thickness slices, the other cored and then diced into cubes approx 1cm across) 150g fudge diced into pieces approx 5mm across 1 Preheat the oven to 160˚C/Gas Mark 3 and grease and line a deep 20cm round cake tin. 2 In the base of your greased/lined cake tin evenly scatter 100g of chopped fudge. Lay the apple slices neatly and evenly on top. Make sure you keep the other 50g of fudge and the diced apple to one side to add to the cake mix. 3 In a large mixing bowl or the bowl to your mixer, place all of the remaining ingredients apart from the apples and fudge. Beat well until light and fluffy before stirring in the reserved fudge and apple pieces. 4 Spoon the cake batter into the cake tin and on top of the apple and fudge you laid out earlier. If you have a loose bottomed tin, place it on a baking tray and then put that in the oven, just in case the fudge oozes out. Bake for between 1 and 1.5 hours. The cake is done when a skewer comes out clean and is firm to the touch. 5 Leave to cool in the tin for 10 mins, then invert onto a serving plate so that the toffee and apple you had at the bottom is now at the top. TIP: * Delicious served warm or cold with custard, cream or ice cream. * Vary the apple type and spices to your taste to make a unique cake that will impress and vanish very quickly!
