Lemon Loaf cake

This Lemon Loaf is super easy to make, perfect for those impromptu coffee mornings. Lemon Loaf by Baking Mad. Heat the oven to 180’c. Butter a 500g loaf tin

  Ingredients:

  • 75g butter (unsalted) softened
  • 83g stevia blend caster sugar
  • 150g Self-raising white flour
  • 1tsp  baking powder
  • 2 eggs medium
  • 1tbsp lemon curd
  • 2½ tbsp Milk (semi-skimmed)

  The Method:

  1. Heat the oven to 180’c. Butter a 500g loaf tin and line it with baking parchment.
  2. Beat the butter and stevia blend together in a large bowl, either with an electric whisk or with a wooden spoon, until the mixture is light and fluffy. Slowly add the flour, baking powder, eggs, lemon curd and milk, mixing all the time until they are thoroughly combined.
  3. Pour the mixture into the prepared loaf tin and bake for 40-45 minutes or until a skewer inserted in the middle of the cake comes out clean. If you have chosen individual cases, reduce this time to 20 minutes or until a skewer comes out clean.
