- 7oz Soft Light Brown Sugar
- 4oz butter, softened
- 1tsp vanilla
- 1 egg
- 7oz self-raising flour
- 100g hazelnuts
- 200g-dark chocolate
Method:
- Using a wooden spoon cream together the butter and sugar then add the vanilla, followed by the egg. Once the eggs are incorporated stir in the flour and hazelnuts. Then, keep mixing until you have a soft dough. Cut the bar of chocolate into pieces, you should get about 50 from each bar by cutting each piece in half.
- Take a heaped tablespoon of the mixture and push three pieces of chocolate into it make sure that the chocolate is covered by the dough and place 2inches apart on the prepared baking sheet, top each dough ball with a piece of chocolate.
- Place in the over and bake for about 10 minutes. You should remove the cookies before they look cooked through, they should not be ‘damp’ looking but just turning golden on top, they will continue to cook once removed from the oven. Leave them on the tray to cool for five to ten minutes so that they are firm enough to lift onto the cooling rack. Best eaten warm.
