Spiced apple buns

Ingredients

  • 175g butter, softened
  • 175g golden caster sugar
  • 3 eggs
  • 175g self raising flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground cloves
  • 2 apples, diced (firm eating apples e.g. Pink Lady)
  • 25g demerara sugar

Instructions

Preheat the oven to 180˚C/160˚C/gas mark 4 and line a 12 hole baking tray with paper muffin cases.

Cream together the butter and golden caster sugar until light and fluffy. Add the eggs one at a time beating the mixture well after each addition. Sift in the self raising flour, baking powder and spices and fold into the mixture until fully incorporated.

Add the diced apple and stir well. Divide the mixture between the 12 muffin cases and sprinkle each with a little demerara sugar.

Bake in the oven for 25-30 mins until well risen and springy to the touch. Allow to cool in the tray for 5 mins before transferring to a wire rack to cool completely. Serve.
