Lotus Biscoff rocky road
Biscoff flavoured rocky road bites with white chocolate, marshmallows and Lotus biscuits too! Delicious and very moreish - give them a go!

- 300g White Chocolate, chopped
- 125g Biscoff Spread
- 50g Unsalted Butter
- 200g Mini Marshmallows
- 200g Lotus Biscuits, chopped
- 100g Biscoff Spread for Drizzle
- 40g Lotus Biscuits
Line a 9/9″ Square tin with Parchment paper and set to the side.
In a Large bowl, add in the Chocolate and Butter – melt on a low heat over a Double Boiler or in the Microwave until fully melted.
In a separate bowl, melt the Biscoff spread in the microwave for 30 seconds and beat into the melted white chocolate mix.
Once its melted and combined, add in the Marshmallows and chopped biscuits. Fold together until combined. Pour into the tin and spread till its even. Melt the remaining 100g Bischoff spread in the microwave. Pour over the rocky road and top off with the remaining 40g of Lotus Biscuits.
Refrigerate until its set!
Remove form the fridge and cut into slices.
